The cliff note condensed story of how one day I was soaking in the mountain air, and the next I was wondering if all people here in Singapore sweat this much :)

"Has it hit you yet that you are in Singapore ?" says the tattooed master working on a perfectly chilled glass of moscato.  As I watched the condensation congregate on his glass, I simply smiled, "no". Little did he know that, that smile was the gateway to the mini stroke, heart attack, seizure, I had been having since we met up for dinner 2 hours earlier.

5 years ago my mom and I dined on foie gras burgers on the terrace of the Park Hyatt in Chicago. I was in pastry school. The burger was great, but what followed was a life altering flight of desserts created by Andres Lara. He presented each one, 5 in total, each one as artistically breathtaking as the next. Then he offered me a stage on his restaurant. I went, I was blown away, my life was quite literally altered. 5 years later I have a few weeks off, turns out he is teaching a 3 day class, no hesitation there, booked the flight, took the class,and at the end invited myself to his restaurant in Singapore... 6 months later...I've quit my job, given Kenza to my mom {knowing full well mom will try to teach her, but Kenza will never be half the scrabble opponent I am!}, packed up my life again this time into 2 red suitcases, and I am getting off a plane in Singapore after accepting an offer to chef at Andres' restaurant. Make no mistake, I am not his replacement, there isn't one!, but he is moving to Hong Kong so I get to play with him in the wonderland he has created, collaborating from across the pond. Talk about a golden ticket, eat that Willie Wonka.

(I am pointing to where you kind find me..although in Asia, finding a tall caucasian women, is a lot easier than finding Waldo. We stand out in the crowd, and there aren't that many of us)

Celery:The happenings of the last few weeks are completely unexpected and wild. there are so many times in my life where I have created circumstances that require me to hold on for dear life because, the ride is leaving! Get on or get off.  I thought for a while that all lives were like this, then I realized, this is what I chose. Some people are adrenaline junkies, base jumping, river rafting, crazy skiers, motorcycles, boats, etc etc...I think I like my adrenaline in the form of gargantuan life changes.  I think a move to Asia should tide me over for quite some time. Now for a few pictures....while I was at the factory with B, they fed us lunch everyday. It was usually hot so it was safe to eat, but from time to time they had salad that had been washed with the non potable water so we have to leave it {or suffer the ugly consequences}. One day while working on the machine, I looked out the window and saw across the corridor an open door with celery on the floor. Not thinking I might be eating that for lunch, I snapped a few shots because it is such a different way of life. Food on the floor? never. 

and then I ate it for lunch.....and thought about how it had been on the floor, but didn't care because it was so good. 


I did not however, eat this. It looked like a bat ear and had the texture of what I think I bat ear would feel like, so it got left.

Typical Day in China for me and B: Walking around with Brian is hilarious because, he is 6'4" so everyone thinks he is a celebrity ....and i am like lady Godzilla.... so people are taking our picture right and left. People have even handed us their babies to pose with, ah Asia I adore so much of the shutter happy you. The water here is so contaminated that you can cook with it, and shower with it and be fine, but brush your teeth with it and you are toast...diarrhea for days. So we brush our teeth with bottled water, and close out mouths when we shower. It is awesome . We wake up at 6a have breakfast -consisting of yams, warm soy milk or Tang, steamed buns, and egg fried rice-, then go back to bed until about 8a, then the car from the factory picks us up at 9a and it is a quick 15 min to the industrial wonderland. I feel at any given time at the autobots are going to come out and transform. The cook at the factory has treats waiting for us in our conference room everyday, some edible some not. Note to self, just because it is wrapped in gold doesn't mean it is a treat, I am pretty sure I ate a bullion cube today ...make that a brown MSG cube. Nothin sweet about that treat. We work on the machine doing our best to charade out what we need with the workers, then my second favorite part of the day comes, lunch. Yes I feel like Winnie the Pooh, always looking to the next meal. They bring this partitioned tray of rice, some veggie thing, some egg thing, some chicken thing, and usually a mystery item, which I may or may not try depending on the smell. Then back to work until 5p when the car takes us back to the hotel and the entire city comes alive. The grocery stores are packed, the streets are awake, and fireworks are shooting off from 6 different street corners at once. We wander the city until we can't move, and then off to bed...being lulled to sleep by the Orwellian 1984-esque speaker blaring Boys to Men, just outside our window. So that is what has been going on here, a little adventure everyday. Not taking China by storm per se, but definitely glad I have a bit of a layover here before Singapore.

Ah the lovely Shanghai airport....now what is the last thing you would think to buy, the last craving you might have before leaving this city? Look closely at the case on the right....

....nope look even closer. There it is, hairy crab, sold in the airport, put into a cooler for you to take on a plane. Take that TSA, I can't take a water bottle through security, but I can carry on a hairy crab??

Sometimes when you are in China you think it is a good idea to get a massage, because it is about 10 dollars per hour with an half hour foot massage. Sometimes you can't decide whether what they are doing is really good, or really bad because it is the cause of so much pain. So you play along like agony at this level is normal. Sometimes they finish and you can barely get off the bed, and then someone takes your picture....

Last year, just before moving to Utah, my neighbor Linda and I decided to send in an audition tape for The Amazing Race . We weren't selected, but while in China these past few days, I am fairly confident we would have won.  Day #4 brought an onslaught of undesirable physical issues due to a combo of mystery food and contaminated drinking water. I was shaken not stirred, but my friend was not so lucky. It was up to me to: find a food store, buy clean water, ramen noodles we could cook in our room, and the chinese equivalent of peptobismal.  Confident I could manage this task, I got suited up in a darling dress with hair back, and headed off. Down to the lobby I skipped knowing I would return victorious..... "you want marp?" "no I need a map...a MAAAPP" Chinese heads shaking back and forth, no one understanding anything....blerg. I left.  Out on the streets I determined my land marks and headed out. A few blocks away I found a market and quickly maneuvered the aisles finding juice, saltiness, and ramen. Everything was in characters however, so I wasn't really sure the flavors. As far as I knew it was baby panda flavored with chunks of dog. I didn't care. Off to the check out only to be met with the fact that american cards don't work ! So I had to mime time I was going to an ATM and to leave my groceries because I would be back. I thought I did rather well, but let's be honest she probably thought I was epileptic. ATM found, food and water bought, off to the pharmacy. More charades, this time about an upset stomach, but they brought a twinkle to the women's eyes who were working there. Next thing I know I am whisked throughout the pharmacy with attendants on every side chattering and handing me bottles. Awesome! Finally a little help...until one touches my stomach and says, "so tiny" at which point I realize I suck at charades, because they think I am preggers. On a happy note I only appear in my first trimester to them, so that's good...I think. Back to square one. A crude drawing of an angry stomach, more charades, and I was off with what I hoped was pepto-ish... and not some form of Chinese laxatives or Viagra. Mission accomplished. I felt victorious. I managed to leave a hotel in a very modern city, buy some things at a modern market, and head back all without getting lost or kidnapped for the sex trade.  Small victories people, it's all about small victories. And I would have won amazing race.

Economy: And voila the eagle has landed. I am sweating like a pig in the Shanghai airport. My ideal travel outfit: cotton cardigan, scarf,  long dress, is now working against me as I enter hot humid China. In a glorious turn of events we got to sit in business class during this 13 hr flight from Seattle to China, complete with fully reclining seat, down blanket,  fluffy standard size pillow, and a hot towel before my bacon wrapped scallop dinner (don't be jealous, it was inedible). In typical Monica fashion, I of course wanted to appear as glamourous as possible while in business class.....and then the flight attendant spilled wine on me due to turbulence ....and then he spilled beer in my ice cream (i ate it anyway, it was just a little beer) ....and then I forgot to check if the guy before me had put the seat down, and he hadn't so i fell in, and my buns hit the cold steel of the bowl....and and then I fell asleep in my Delta bed .......and then I slept with my mouth open....and then Brian took a picture and showed it to me when I woke up, yowzer. All attempts at glamour had failed. You can take the girl out of economy, but sometimes you can't take the economy out of the girl :)

So today I am getting on a plane again! Yay! 2 New countries in 1 year, I did not see that coming. First there was Singapore, hadn't planned it and then in April it happened! Then a few weeks ago, I invited myself on a friend's business trip to China.  Much to my surprise he said, "let me check flights". So I got a visa and  now I am waiting to board a flight to Beijing. A few weeks ago I thought this trip would be a wild 2 week adventure with a dear friend, I had no idea it would be my 2 week layover before moving to Singapore.  I am choosing not to process any of the 674 emotions I am feeling.

Remember last April when I went to Singapore for my 30th birthday? Well I am moving there. I got offered a pastry chef job there and I of course have accepted, my first day with my new staff is Nov.1st. So now you have a reason to save up flyer miles, Singapore is always calling, and I have a guest room with your name on it! (I will be working inside that alien pod-like structure on the left @Pollen) And will of course be documenting my life abroad, right here.

Adaption:a recent text conversation happened like this:

"Hey Monica I am going running tonight, want 2 join me?"

"I would love to but I wrecked my knee at clogging competition in Sweden a few weeks ago so I can't :("

The conversation continued, I informed the guy I was joking, but that is not why I relay this tidbit... Seriously? That is my first response? Within seconds of getting his text that is what I write?! Clogging in Sweden? Yes I am pretty sure I am smart, but my brain sometimes goes to the very odd corners of it's capacity to get it's info, and it does it frequently, and very quickly! I thought it was funny, the recipient did, but not really, and was confused, and thus ran alone.  I considered adapting my personality, then got some Little Debbie Fancy Cakes instead.

Sometimes I give Kenza baths, she really loves it, sometimes I think she is so cute I grab my phone and capture the bath....sometimes I realize I just took 4 pictures of giving my dog a bath and I subsequently realize I am not that far off from a crazy cat lady. Time to join Tinder.

The time I went to the mountains to cook for a young adult group: Last weekend I was asked to cook for 100 young single adults for 3 days. Challenge accepted, weekend was bliss. Accept for when you get all those pent up hormones in one cabin, and standards and morals are taken to their utmost breaking point {because the boys room is just across the hall!}, and instead of acting on the urges, they pull the fire alarm at 3 am, because at a cabin in the woods, that is about as risque and wild as a 22 yr olds can be without bringing dishonor to the family.

that is what happened....here is how I reacted:

My last apt in DC had a very touchy, very loud fire alarm. It would sometimes go off because the guy upstairs was cooking! I would fan it with whatever was close and be done with it. At 3am in a cabin in the woods in Utah, I am fast asleep, so when I fire alarm goes off, naturally I revert back to DC. In my underwear, I jump up on top of my bed, grab my quilt and proceed to frantically jump fan in the direction of the fire alarm 5 feet above my head. It only took about 15 seconds of crazy for me to realize there was no smoke, I was barely conscious, doing no good, and looking ridiculous. It was at this moment I got back into bed and was never so grateful I was sleeping alone, because if anyone had seen, I would have never lived it down.

Dear Ikea,

Quick tip, during a quick trip a few days ago, I happened upon your knife display, it struck me as curious. Knives, suspended by magnets, attached by a cable, but once released from the magnet, they are allowed to hang well within reach of children. Don't you too find this curious? In the land of 3.64 children per mother in the store, that there be knives, dulled but still implailable, in the reach of the 3? Where a simple straw is turned into a knife by wild imagination, imagine what they do when they find your display...real knives! A worthy weapon for such a vivid little boy. I suggest a "Quick Suture" stand next to your "2 for $2" hotdog area. Just a thought.

Jam:There are certain moments in life that are, simple, calm, mundane.....or so it would seem. But then you take this "simple" process of picking and cutting hundreds of pears for jam, and add Moore laughter, Moore stories, and a few Moore girls, and you have created a tangible harvest of memories that are unparalleled by conventional "fun".
Not sure I could rock red lipstick: Stole this video from my friend Ruth's blog. She is a dear friend and I think she and I should take to the skies, for a few months at least. Let's be honest here, ever since I was little I thought that flight attendants were just about as glamourous and wonderful as Ms. America {I said I was little!} I looked into it several times, but decided against it.....and recent conversations with a pilot friend of mine have shed a light that they are frequently cat hoarders, so I am glad that whim never became reality. That being said, in my next life, this seems intriguing:

That one time in my life I didn't want to be in charge {I know, it finally happened}: there are certain situations I do not like, yard sales are one of them. I am terrible at flea markets too....my conversations go something like this:

"um this says it is $15 dollars, would you take $10 or could we do 2 for $20"
"no this is very nice item"
"okay, you're right, I'll give you $16 how about that?"

At yard sales the conversations are the very same. And if I am the seller it's worse:

"um this says it is $15 dollars, would you take $10?"
"how about I pay you $15 just to leave me alone and you keep the shirt"

However on Saturday I faced my fear. My mom and sister, Jen, wanted help with their yard sale, and I cannot resist anything either of those two ask! And I love money :) I can haul boxes, I can price, I can setup, take-down, shlep, but sit there and barter?! Oh no my friends, not for me, I would much prefer vaccinating a rabid pitbull. They said I didn't have to :) and if anyone came near me, I pretended to not speak english, and if they didn't either, I just pointed at Jen or Mom. We didn't make tons, but I did take my share in mostly $1 bills so this morning when I woke up I could throw the money while in bed like they do in the movies.....it was glorious, until I remembered they were just a bunch of $1's. Then I felt just felt like a waitress, or a stripper.

Ms. Manatee:: so a while back there was this guy, tall, dark, handsome {no really he was 6'4", dark hair, and really really handsome}, he wanted to go for a late night swim in the lake. Yahoo...this is code for," let's put on minimal clothing, say we are going to go for a swim, but spend all our time "playing" around in the water" right? WRONG.  I carefully chose a cute suit, not one that is completely unflattering, not ones that is too cute, but one Goldilocks would approve of, and it was just right.

We get out of the car, it's too dark for him to see my cute suit. FAIL.  He throws me a swim cap and I realize, this is not amateur swim hour, this guy is serious, no "playing". FAIL. We scramble down the rocks and into the chilly lake. While getting in the late night fisherman on shore looked at us like we were brainless convicts trying to swim from Alcatraz.  Before I know it he is in and gone. It was like watching a flying fish. I don't know if his body actually ever touched the water; I felt like clapping. After closing my mouth and gaining composure, I think, "I have been swimming laps almost all summer, I got this!". Double FAIL. After maybe 20 strokes I quickly realize I am more like a manatee than a flying fish.

I can't see where I am going, there are waves smacking me every time I try to breath,  gnats are buzzing my ear, and I am not wearing goggles. "I am going to drown", "I knew I should have asked Hannah if there are fresh water sharks", "I hate this....kind of", "what if I happened upon a dead body". Yep looking super hot now MK, back comes the flying fish and I am just a hot mess. Heart racing, sure I am going to drown {even though I can touch bottom}, choking on fish poop water....  "Hey isn't this great, how are you doing?" I wanted to say something clever to disguise my current state, FAIL. "I am freaking out!" happened instead. Manatees Unite. We talked, I chilled, we kept swimming for another 15 min or so then headed back in. I finally am feeling awesome, WHACK "AHHHHHHHHHH" I  hit a body, a real body with my arm. I knew it I knew it, dead body in the water!!! Nope the flying fish just swam in front of me. Freakout #2 was handled rather quickly :) he didn't see. One more awkward exchange with the fishermen who still thought we were nuts and we were back in the car and smelling like lake.

On the ride home I realized my evening turned out better than I thought. Instead of some testosterone driven neanderthal trying to "get some" all night, I was terrified that I would drowned, I thought I ran into a dead body, and I felt like a manatee. Stellar. Moral of the story though: I was put at ease without being made to feel dumb, lame, or whussy. {Not bad flying fish, not bad}. Maybe not all dates have to be Dive Bomb Dates.
